The method

Step by step

    Place the chicken pieces in a medium bowl.

    Add the soy sauce, rice vinegar, salt, and black pepper to the chicken and toss to coat.

    In a separate shallow bowl, whisk the egg.

    In another shallow bowl, combine the cornstarch and all-purpose flour.

    Dip each chicken piece into the beaten egg, then dredge it in the cornstarch and flour mixture, ensuring it's fully coated.

    Heat the vegetable oil in a large pot or deep skillet over medium-high heat until it reaches 350°F (175°C).

    Carefully add the coated chicken pieces to the hot oil in batches, making sure not to overcrowd the pot.

    Fry the chicken for 4-6 minutes per batch, or until golden brown and cooked through.

    Remove the fried chicken with a slotted spoon and place it on a wire rack set over paper towels to drain excess oil.

    In a medium bowl, whisk together the orange juice, orange zest, soy sauce, rice vinegar, sugar, ginger, garlic, and red pepper flakes for the sauce.
