The method

Step by step

    Preheat your oven to 180°C (350°F). Grease and flour a 20cm (8-inch) round cake pan, or line the bottom with parchment paper.

    Carefully separate the eggs, placing the whites in a large, clean mixing bowl and the yolks in a separate medium bowl.

    Add the salt to the egg whites. Using an electric mixer, beat the whites on high speed until stiff, glossy peaks form.
