- 3 cupwater
- 1 cancoconut milk, full-fat, 400ml
- 0.5 pcsyellow onion, finely chopped
- 1 pcsgreen chili, slit lengthwise
- 2 clovegarlic, minced
- 1 tspginger, grated
- 0.5 tspturmeric powder
- 1 tspcurry powder, mild
- 10 pcscurry leaf
- 0.25 tspfenugreek seed

- 1 tbsplime juice, freshly squeezed

The method
Step by step

Combine the rinsed red lentils, water, chopped onion, slit green chili, minced garlic, grated ginger, turmeric powder, curry powder, curry leaves, and fenugreek seeds in a medium pot.

Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the lentils are tender and have mostly absorbed the water.

Cook’s note: Stir occasionally to prevent sticking to the bottom of the pot.

Once the lentils are tender, stir in the coconut milk and salt.

Continue to simmer gently for another 5 minutes, stirring occasionally, allowing the flavors to meld and the curry to thicken slightly.

Cook’s note: Do not boil the curry vigorously after adding coconut milk, as it can cause it to curdle.
