Equipment

tofu press · shallow dish · spatula · blender · non-stick pan

The method

Step by step

  1. 1

Press the extra firm tofu for at least 15 minutes to remove excess water, then slice it into four even steaks.

    About 15 min

Cook’s note: For best results, press tofu for 30 minutes or longer.

  2. 2

Combine the red chili, garlic, red bell pepper, lemon juice, smoked paprika, dried oregano, salt, black pepper, and olive oil for the peri-peri sauce in a blender or food processor.

    About 5 min

  3. 3

Blend the ingredients until a smooth sauce forms, adding a splash of water if needed to reach desired consistency.

    About 2 min

  4. 4

Place the tofu steaks in a shallow dish and pour the peri-peri sauce over them, ensuring each steak is well coated.

    About 2 min

  5. 5

Cover the dish and marinate in the refrigerator for at least 30 minutes, or up to several hours for deeper flavor.

    About 30 min

Cook’s note: Marinating overnight will yield the most flavorful tofu.

  6. 6

Heat the olive oil for cooking in a large non-stick pan or cast-iron skillet over medium-high heat.

    About 2 min

  7. 7

Carefully place the marinated tofu steaks into the hot pan, reserving any extra marinade.

    About 1 min

Cook’s note: Avoid overcrowding the pan; cook in batches if necessary.

  8. 8

Cook for 5-7 minutes per side, until the tofu is golden brown and slightly crispy.

    About 14 min

Cook’s note: Periodically baste with the reserved marinade during cooking for extra flavor.

  9. 9

Remove the tofu steaks from the pan and serve immediately, garnished with fresh parsley if desired.
