Equipment

grater · paper towels · skillet · spatula · large bowl · kitchen towel

The method

Step by step

  1. 1

Place the grated potato and grated yellow onion into a large bowl.

Cook’s note: Squeeze out any excess liquid from the grated potato and onion using a clean kitchen towel to ensure crispy pancakes.

  2. 2

Add the eggs, all-purpose flour, salt, and black pepper to the bowl.

  3. 3

Mix all ingredients thoroughly until well combined.

    About 2 min

  4. 4

Heat the vegetable oil in a large skillet or frying pan over medium-high heat.

    About 3 min

Cook’s note: Ensure the oil is hot enough before adding the batter to prevent the pancakes from becoming greasy.

  5. 5

Drop spoonfuls of the potato mixture into the hot oil, flattening them slightly with the back of the spoon to form thin pancakes.

Cook’s note: Do not overcrowd the pan; cook in batches if necessary.

  6. 6

Cook for 3-5 minutes per side, or until golden brown and crispy.

    About 8 min

  7. 7

Remove the cooked pancakes from the pan and place them on a plate lined with paper towels to drain excess oil.

    About 1 min

Cook’s note: Keep the cooked pancakes warm in a low oven while you finish frying the remaining batter.

  8. 8

Serve hot with sour cream or applesauce, if desired.
