  • 2 cupspinach, roughly chopped(optional)

The method

    Heat the palm oil in a large pot or Dutch oven over medium heat.

    Add the chopped tomato, curry powder, dried thyme, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until the tomatoes break down and the sauce thickens slightly.
