The method

Step by step

    Prepare a baking sheet by lining it with parchment paper and lightly greasing the paper with butter.

    In a heavy-bottomed saucepan, combine the sugar, honey, and water.

    Heat the mixture over medium heat, stirring constantly until the sugar completely dissolves.

    Once the sugar is dissolved, stop stirring and bring the syrup to a boil.

    Continue to boil the syrup without stirring until it reaches the hard crack stage (149-154°C or 300-310°F) on a candy thermometer.

    Cook’s note: If you don't have a thermometer, drop a small amount into cold water; it should form brittle threads.

    Remove the saucepan from the heat and immediately stir in the bloomed saffron, rose water, slivered almonds, and chopped pistachios.

    Carefully pour the hot mixture onto the prepared parchment-lined baking sheet.

    Using an offset spatula or the back of a spoon (lightly buttered to prevent sticking), quickly spread the mixture into a thin, even layer.

    Allow the Sohan Asali to cool completely at room temperature for at least 30 minutes until it is firm and brittle.
