The method

Step by step

    In a medium bowl, combine the olive oil, lemon juice, garlic, cumin, coriander, paprika, turmeric, cayenne pepper (if using), salt, and black pepper for the shawarma marinade. Whisk until well combined.

    Heat a large skillet or frying pan over medium-high heat. Once hot, add the marinated seitan in a single layer, ensuring not to overcrowd the pan. Cook for 5-7 minutes, stirring occasionally, until the seitan is browned and slightly crispy.
