  • 1 pcscarrot, peeled and finely chopped

  • 1 tbsptomato paste

The method

Step by step

    Heat the olive oil in a large pot or Dutch oven over medium heat.

    Stir in the minced garlic and cook for another minute until fragrant.

    Remove the pot from the heat. For a smoother soup, use an immersion blender to blend directly in the pot until your desired consistency is reached. Alternatively, carefully transfer portions to a regular blender and blend until smooth, then return to the pot.
