  • 50 ggreen olive, pitted and roughly chopped
  • 2 tbspcaper, rinsed and drained
  • 2 tbspred wine vinegar
  • 1 tbspgranulated sugar
  • 0.5 tspsalt
  • 0.25 tspblack pepper, freshly ground

The method

Step by step

    Place the diced eggplant in a colander, sprinkle generously with salt, and let it sit for 20-30 minutes to draw out excess moisture.
