The method

Step by step

    Line an 8x8 inch baking pan with parchment paper, leaving an overhang on two sides to act as handles.

    In a large heatproof bowl, combine the marshmallow creme and white chocolate chips. Add the optional walnuts now if you are using them.

    In a heavy-bottomed medium saucepan, combine the granulated sugar, evaporated milk, unsalted butter, and salt.

    Bring the mixture to a full rolling boil over medium-high heat, stirring constantly with a heatproof spatula.

    Once boiling, cook for exactly 5 minutes, stirring continuously to prevent scorching on the bottom of the pan.

    Immediately remove the pan from the heat and carefully pour the hot syrup over the marshmallow mixture in the bowl.

    Add the vanilla extract to the bowl.

    Stir vigorously with the spatula until the white chocolate is completely melted and the mixture is smooth and glossy.
