The method

Step by step

    Carefully crack open the hard shell of the wood apple using a heavy knife or a hammer, then scoop out all the dark, fibrous pulp into a medium-sized bowl.

    Cook’s note: The wood apple shell is very tough; use caution and a sturdy surface. A meat mallet or the blunt side of a heavy cleaver works well.

    Add 0.5 cup of water to the wood apple pulp in the bowl and let it sit for 5 minutes to soften the pulp, making it easier to work with.

    Thoroughly mash the softened pulp and water mixture with a fork or your hands, breaking down the pulp and separating it from the seeds and fibrous strands.

    Cook’s note: Wearing food-safe gloves is recommended if using your hands, as wood apple can stain.

    Place a fine-mesh sieve over a clean bowl and pour the mashed wood apple mixture into it. Press down firmly on the solids with the back of a spoon or a spatula to extract as much liquid as possible.
