The method

Step by step

    Roast the large eggplant directly over a gas flame, under a broiler, or on a grill, turning occasionally, until the skin is completely charred and blistered, and the flesh feels very soft when gently squeezed, about 15-20 minutes.

    Immediately transfer the hot, roasted eggplant to a medium bowl, cover it tightly with a lid or plastic wrap, and allow it to steam for 10 minutes.
