The method

Step by step

    Heat a large skillet or frying pan over medium-high heat.

    Add the olive oil to the hot pan.

    Add the cremini mushrooms to the pan in a single layer if possible, working in batches if necessary to avoid overcrowding.

    Cook’s note: Overcrowding will steam the mushrooms instead of browning them.

    Cook the mushrooms for 5-7 minutes, stirring occasionally, until they release their liquid and start to brown.

    Stir in the garlic and red pepper flakes (if using) and cook for another 1-2 minutes until fragrant.

    Pour in the dry white wine and cook for 2-3 minutes, scraping up any browned bits from the bottom of the pan, until the liquid has mostly evaporated.
