The method

Place the salt pork cubes in a small saucepan, cover with water, and bring to a boil. Boil for 5 minutes to remove excess salt, then drain and set aside.

In a large pot or Dutch oven, combine the drained soaked beans, the boiled salt pork, chopped onion, bell pepper, celery, and minced garlic.
