Equipment

pot · colander · whisk · cutting board · knife · small bowl · large mixing bowl

The method

Step by step

  1. 1

Rinse the black-eyed peas thoroughly under cold water.

    About 1 min

  2. 2

Place the rinsed black-eyed peas in a medium pot and cover with plenty of cold water.

  3. 3

Bring the water to a boil over high heat, then reduce the heat to medium-low and simmer for 20-25 minutes, or until the peas are tender but still hold their shape.

    About 25 min

Cook’s note: Do not overcook the peas, as they will become mushy.

  4. 4

Drain the cooked black-eyed peas and rinse them with cold water to stop the cooking process and cool them down.

    About 1 min

  5. 5

Transfer the cooled peas to a large mixing bowl.

  6. 6

Add the yellow onion, cucumber, tomato, bell pepper, and fresh parsley to the bowl with the peas.

  7. 7

In a small bowl, whisk together the dijon mustard, apple cider vinegar, extra virgin olive oil, garlic, salt, and black pepper to create the dressing.

    About 2 min

Cook’s note: Taste the dressing and adjust seasonings as desired.

  8. 8

Pour the dressing over the pea and vegetable mixture.

  9. 9

Gently toss everything together until all ingredients are well combined and coated with the dressing.

    About 1 min

  10. 10

Serve immediately or chill in the refrigerator for at least 30 minutes for flavors to meld.

Cook’s note: Chilling the salad enhances its refreshing qualities.
