  • 400 gseitan, cut into 1-inch (2.5 cm) cubes
  • 2 tbspolive oil
  • 1 pcsyellow onion, chopped
  • 2 pcscarrot, peeled and sliced
  • 2 pcscelery stalk, sliced
  • 3 clovegarlic, minced
  • 250 gcremini mushroom, quartered
  • 2 tbsptomato paste
  • 1.5 cupred wine, dry, e.g., Pinot Noir or Merlot
  • 2 cupvegetable broth
  • 3 gfresh thyme
  • 1 pcsbay leaf
  • 2 tbspall-purpose flour
  • 1 tspsalt
  • 0.5 tspblack pepper, freshly ground

garnish

  • 2 tbspfresh parsley, chopped(optional)

The method

Step by step

    Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

    Add the seitan and cook until browned on all sides, about 5-7 minutes. Remove the seitan from the pot and set aside.

    Reduce heat to medium. Add the onion, carrot, and celery to the pot and sauté until softened, about 8-10 minutes.

    Stir in the garlic and mushrooms, cooking for another 5 minutes until the mushrooms begin to soften.

    Add the tomato paste and all-purpose flour, stirring constantly for 1-2 minutes to coat the vegetables and cook out the raw flour taste.

    Pour in the red wine, scraping the bottom of the pot to deglaze any browned bits. Bring to a simmer and cook for 5 minutes until slightly reduced.

    Return the seitan to the pot. Add the vegetable broth, fresh thyme, and bay leaf. Season with salt and black pepper.

    Bring the stew to a gentle simmer, then reduce heat to low, cover, and cook for at least 60-75 minutes, or until the vegetables are very tender and the sauce has thickened.
