    While the chicken simmers, prepare the spice paste. Combine the shallot, garlic, fresh ginger, fresh turmeric, candlenuts, coriander seeds, cumin, and black peppercorns in a food processor or mortar and pestle. Process or pound until a smooth paste forms.
