  • 30 gginger, cut into thin matchsticks
  • 3 pcsscallion, thinly sliced, white and green parts separated

The method

    Pat the white fish fillets dry with paper towels and season lightly with salt and white pepper on both sides.

    Arrange a few ginger matchsticks and the white parts of the scallions on a heatproof plate that fits inside your steamer.

    Place the seasoned fish fillets on top of the ginger and scallion whites.

    Bring water in a steamer pot or wok to a rolling boil over high heat.
